Before sunrise, each delicate crocus flower is carefully picked by hand during the brief 2-month harvest season beginning in late November. The crimson stigmas are then meticulously separated by hand, a process requiring extraordinary skill and patience. It takes approximately 70,000 flowers to produce just one pound of saffron, making it one of the world's most precious and labor-intensive spices.
